
Sourced from an old organic chardonnay vineyard just a few kilometers from the ocean, we’ve partnered with a fifth-generation organic farmer in the Coteaux de Beziers wine region of France for this non-alcoholic wine. We start by crafting our base wine, and then delicately remove the alcohol before adding a gentle sparkle at bottling.
The result is a wine with beautiful tension, featuring a crisp green-apple intensity that frames a round yet well-defined palate. Layers of flavor emerge, with notes of pear skin and almond lending to a phenolic complexity and an impressively long, but smooth finish.
This complexity makes it an excellent choice for food pairing. Its bright, laser-sharp acidity cuts through the richness of dishes like foie gras, while its depth and weight complement and cushion the briny flavors found in a caviar. Versatile and elegant, this wine is a perfect tool for tasting menus where guests seek a sophisticated pairing, but may also want to consume less alcohol.
